The choice of stainless steel is driven by factors such as corrosion resistance, hygiene, aesthetics, and budget considerations. When it comes to stainless steel the types mostly discussed are – AISI 304, AISI 316, and AISI 430 which cater to various kitchen requirements in both commercial and residential kitchens.

AISI 304/304L

AISI 304/304L, also referred to as 18/8 or 18/10 stainless steel, is one of the most adaptable and frequently used stainless steels in kitchens. AISI 304 is a superb option for both commercial and residential kitchen applications because of its durability and reputation for corrosion resistance. It contains 18% chromium and 8% nickel, which gives it its “18/8” composition.

This substance is ideal for surfaces exposed to moisture and acidic substances since it is highly resistant to corrosion from water, food acids, and chemicals. Because of its smooth surface, it is simple to clean and maintain, which reduces the growth of bacteria and germs. Additionally, AISI 304 is aesthetically pleasing and has a polished finish that gives fixtures and appliances a contemporary, streamlined appearance.

AISI 316

AISI 316 are perfect materials for kitchens exposed to more aggressive environments, such as those in coastal areas or with high chloride content. In areas with high salt content in the air, such as beachside restaurants. They can withstand enhanced corrosion resistance, extreme conditions, and aggressive chemicals.

AISI 430

AISI 430 stainless steel still has a place in kitchens despite not being as corrosion-resistant as AISI 304 or 316 due to its cost and moderate corrosion resistance. It lacks nickel content but has a chromium concentration of 16–18%. Since it can tolerate high temperatures, it is appropriate for appliances that are exposed to heat. It frequently serves as a covering for cabinets and drawers, offering a nice aesthetic at a reasonable price. AISI 430 can be utilized for indoor equipment like range hoods despite not being the best choice for very corrosive situations.
